Soft Dahi Vada Recipe
Dahi Vada

Dahi vada / Dahi Bhalla is a type of chaat (snack) originated from India. It is prepared by soaking vadas (fried flour balls) in thick dahi with some tangy sauce and spicy seasoning.


This Dahi Vada is so delicious that you cannot just stop with one serving.  And the topping of Katti-mithi(tangy) imli chutney along with roasted cumin seeds and a pinch of red chili powder, even makes it more mouth-watering.


We make Dahi vada very often at home because it is everyone's favorite. Dahi Vada is such a popular dish in India that it has a separate fan base. Hence, it has formed a permanent place on the menu for various Indian celebrations.



Ingredients:

  • Moong Dal      -           1 small bowl   
  • Urad dal         -           1/2 small bowl
  • Curd                -           ½ liter
  • Oil (to deep-fry)
  • Salt
  • Black paper  powder  -           1/4th tbsp
  • ½ inch ginger - chopped
  • Green chili paste
  • 1 pinch of Hing(asafetida)
  • Sugar for curd            -           2 to 3 tbsp
  • Coriander leaves
  • Red chili powder, chat masala for seasoning         


Ingredients for khatti-mithi Chutney:

  • Imli(tamarind)    -           1 small bowl
  • Jaggery(Gud)       -           ¼  small bowl
  • Black salt              -           ¼ tbsp
  • Salt to taste
  • 1 pinch of Hing(asafetida)
  • Jeera
  • Red chili powder              -           ¼ tbsp


Steps:


How to make khatti-mithi chutney:

  1. Remove seeds from tamarind(imli) and Soak it in lukewarm water for 3-4 hours.
  2. Squeeze the soaked tamarind with hands to pulp.
  3. Strain the pulp and keep it aside.
  4. Heat 1 tbsp of oil in small frying pan and add cumin seeds to crackle and lower the flame.
  5. Add 1 pinch of hing  and 1/4th tbsp of red chili powder to the oil.
  6. Add this tadka in the strained pulp.
  7. Add 1/4th tbsp black salt and salt to taste.
  8. Stir it properly and cook it for the next 3-4 minutes.
  9. Add jaggery (as per your taste).
  10. Boil till it becomes a little thick.
  11. Remove it from flame and keep it aside.



How to make Vada :

  1. Wash Urad and moong dal separately and properly 3-4 times with sufficient quantity of water
  2. Soak  Urad and Moong dal separately for 4-5  hours.
  3. After that, grind Urad and Moong dal separately.
  4. Mix both dal in a bowl.
  5. Add Ginger paste, green chili paste, black paper powder, and salt(to taste) to the batter.
  6. Mix all ingredients with the batter. Wisk it properly till it gets fluffy. You can add 1 or 2 tbsp of water for better consistency.
  7. Heat the oil in a big pan to deep-fry the vada.
  8. When oil becomes medium-hot, add a spoonful of batter to the oil. [Tip: Test the oil by pouring a pinch of batter in the pan. If it floats, the oil is ready]
  9. When vada becomes golden, turn them to cook from the other side. [Tip- Don’t be in a hurry to turn the vadas. Let them become golden from both the sides]
  10. Once vadas are golden and crisp from both the sides,  remove it from oil and place on paper towel for some time.
  11. Take a big bowl of lukewarm water and add a pinch of salt to it.
  12. Soak the vadas to this lukewarm water for 4-5 minutes.
  13. Take the Vadas out from the water and squeeze them with hands to drain extra water.


For Seasoning:

  1. First prepare curd for Dahi Vada -  Add black salt and sugar as per taste. Whisk it well.
  2. Dry Roast Cumin Seeds in a frying pan. Grind it to make a fine powder.

To Serve:

  1. Take serving dish. Place 3-4 Vadas on the dish. Pour some curd and khatti-mithi chutney on it.
  2. Season it with cumin powder, chaat masala and red chili powder.
  3. Garnish it with green coriander leaves.



Delicious, soft, tasty Dahi Vadas are ready to serve. :)
