Besan Sev is an Indian snack or an add on for various dishes. Besan Sev is made up of gram flour(Besan). Besan Sev looks like fried noodles but has a spicy taste and is crushed.
Besan Sev can be easily prepared at home. But you need a Sevai machine to prepare Sev.

You can eat Besan Sev with several Indian dishes.
Besan Sev is available in several variations- Spicy Besan Sev, Laung(Cloves) Besan Sev, Lasoohni(Garlic) Besan Sev, and many more.
The one which we are cooking today is Spicy Halwai style Besan Sev.
Ingredients:
- Gram Flour - 3 cups
- Cooking Oil - 1/4 cup (for dough)
- Cooking Oil to fry the Besan Sev
- Red chili powder - 1 tbsp
- Asafetida(Hing) - 1/2 tbsp
- Cloves(Laung) - 4
- Black pepper - 1/2 tbsp
- Cumin seeds - 1/2 tbsp
- Water to knead dough
- Salt to taste
Steps:
- Dry Roast Cloves, black pepper, and cumin seeds in a small pan. Grind all finely.
- Take a bowl. Add half a cup of cooking oil and a half cup of water to the bowl. Now add all spices i.e. Red chili powder, Red chili powder, Asafetida, and salt to taste to the bowl. Mix all ingredients well with a spoon until the salt properly gets dissolved in the mixture.
- Once the salt is dissolved in the mixture, add gram flour, mixture of finely grinded Cloves, black pepper, and cumin seeds to the mixture.
- Now, mix the gram flour properly with the liquid mixture of spices, oil, and water. Knead this mixture to make a dough. The dough should not be very soft enough, if not sev will b a little hard in texture and not crunchy. To make dough soft, you can add a little more water to the dough.
- Make little balls of the dough so that they can fit into the sevai machine.
- Grease the sevai machine with the oil. Put the dough in the machine. Close the sevai machine tightly.
- Take a pan to fry the Besan Sev. Add oil to the frying pan.
- Once oil is medium hot, We need to make Sev directly into the frying pan. For this, hold the Sevai machine with both the hands and Press both the hands of the machine just as shown in the following video.
[ Be careful while making the sev directly into the frying pan as oil is hot.] - When the sev is light golden in color, turn the sev so that it will be fried from the other side too.
[Tip: When you put Besan sev in the oil, fry the sev from one side till the oil bubbles decreases in number and then turn it around and do the same. Don't fry the Besan Sev on high flame else Besan sev will not be crunchy but it will be hard.] - Once Besan Sev is fried, remove Besan Sev from the oil and put it on the paper towel. Paper towel will soak the excess oil from the save.
- Let the fried Besan Sev to come on normal temperature.
- Crush the Besan Sev into small pieces or you can serve it as it is. Your choice.... :)
Besan Sev is ready to serve.
You can serve this with other Indian snacks, raw or however you like it.
You can also add ingredients according to your taste. Also, you can add ingredients like cloves, garlic, black pepper, etc... or Create your own variations but please don't forget to share it with us................ :)
